Gouache can be opaque as well as transparent which watercolors can only work as "transparent". I prefer goauche as my medium to painting to watercolor due to the ability to be opaque and it can act like watercolor. It's also easier to rework a picture in goauche vs watercolor.

You need to understand the basics like how to control the values of a picture, or understanding chiaroscuro before thinking any program is going to get you to "color realistically" If you can't shade/color realistically with a pencil, don't expect Photoshop to do the job for you.
The only time I've seen Burn and Dodge used effectively is when the person works in grisaiile/greyscale mode. They'd only effect the values in the grey shade and place a flat color. They'd use overlay mode for the grey values.

If I remember correctly you have to keep a nib at a certain angle or otherwise you'll cause the "prongs" to split open and spill more ink than normal. It takes almost a year to get used to nibs, or 1000 drawings, and even then expect to use lots of correction fluid
