    Macross Plus is a very good series. Evangelion I find overrated, however, if you can rent it at blockbusters might be a good place to start to see if it's worth it. In fact I recommend that you do that before buying any anime series to see if you like it.

    Other than getting reference, I can't tell you "how to draw them" this is an observation. As for digitally you can use many different line tools depending on the program and use Bezier curves to make lines as well.
