    You can try doing the ball and box/cube method to get the angles right, or just all wedges depending on head construction. The trick in drawing isn't trying to think of the details first but breaking things down to basics, in this case, basic shapes.

    You can do it without layers, There are masks There are channels However, most people are more comfortable with layers but I have seen people use channels to get the same result, and masks if they just do it on one layer.
