I don't know about you all but I know this very much seems to be true for me.
Do you think our fetishes are representative of deep desires?

I am boggled by the amount of people denying that their fetishes are not representative of their deep desires. A fetish is pretty intrinsically connected to ones' deep desires, in one form or another. Maybe I am horribly misunderstanding the terminologies usage, but for example, if someone has a lingerie fetish...Is that not a part of their desires? If not especially a deep desire (regardless of how it pans out)? Interpret the fetish itself as you will, but some, if not a large amount of desire is undeniably there.
How/why are people denying this? Or are they attributing something like a 'fetish' is on par with 'a hobby'?

I think it really varies with each person and each fetish. For some, it's as simple as the fact that they find something beautiful.
But I just know that for me, my fetishes really do symbolize desires that are rather buried within me. I wouldn't mind telling you guys how but a lot of people don't like hearing about other people's fetishes understandably enough so that's why I'm shutting up about it.

Sorry. I know the OP's rather vague but I can't get any more specific than that without going into details. And as I said, I don't think people wanna hear about my fetishes.
It's not really the fact that they want to be eaten. It's the feeling it symbolizes. Ugh, can't explain it with vore so I'll try something simpler:
Bondage.
Generally, when people have a desire to be bound, it's not that they want to be tied up but it's the feeling of giving up control. For someone who likes to bind people, it's the feeling of being IN control. THAT'S what they're getting off on. (Typically)

This. Which actually extends into tentacles. Best way to describe that is equal parts soft vore and bondage.
Another one is transformation. I think everyone gets this one though. In fact, I would even hazard to say that transformation is definitely one of the more relatable fetishes out there, if not one of the most.

I fail to see what that has to do with the OP. He asked if one's fetish represents their "deepest desire." Clearly vore people's "deepest desire" is NOT to be eaten or to swim in stomach acid or whatever. It's just a representation of some other sexual feeling.
I think a lot of the far out fetishes are like that, representations of some other sexual feelings played out in some strange fantasy. I think there are other fetishes that can be caused by damage and should be worked out in therapy rather than embraced.

My post has everything to do with the OP because fetishes are more or less representations of subconscious desires. He didn't say it was exactly, just a representation.

Well, the concept of transformation is actually much more straightforward than you'd think. Simply put, people want to be someone or something else. This can be for as simple a reason as being more attractive or as complex as wanting to escape ones life completely and embrace a new form and state. Either way, if you'd like to improve or change any aspect of yourself at all, you can't deny the concept has appeal.
Transformation porn usually comes with bondage or being forced somehow to do it which, as you said, represents giving up control. Now let's put two and two together and bring up an example of all the things we just discussed. So, we look at tentacle/vore-transformation porn which, on the surface, looks really weird. But when we break it down, it represents giving in and giving up control while becoming someone or something the viewer wants to be for whatever reason.
