Have you got the ingredients for shortbread?
You can probably sandwich them and use up that filling.

Oh no, another forum I visit has switched over to xenforo and it looks terrible. Anything but xenforo.

I used to make large batches of shortbread. I'd portion them and roll them into rolls with baking paper and glad wrap, twist the ends and freeze the rolls for future use.
When I wanted to make shortbreads I'd just pop a roll out, defrost it, and use a serated knife to slice disks for baking.
A roll like this (but homemade and of shortbread):
