There's a restaurant in/near Colorado Springs called Solo's (if I remember right) had a plane as a part of the building, anyway I thought the chicken marsala was one of the best things I've ever had.

I wish... I just go on vacation there once in a while, not often enough...

A local steakhouse type of place has incredibly good food, If I recall correctly, mixing their rice side with the various drippings from a steak is win.

Sadly I can't think of any home made dishes that I remember being absurdly good.

Apatiser: Smoked moose with chantrelle "kräm" with special crisp breads.


Main Course: Medium rare enison with chanterelle sauce with just a splash of red wine for taste. Large, grilled potatoes. And with a nice side salad.

And for desert, Crème Brulée.

Anyway, I love most pasta dishes. I make a baked ziti with red peppers and fresh tomatoes that is pretty freaking delicious. I offer the recipe to anyone who likes the dish, but everyone always flips out and refuses to eat it ever again because there's goat cheese in it. :?
Also, anything with eggplant.
And peeled/pitted avacadoes are like candy. Mmmm.

I love my Corned Beef Hash in the mornings

2 to 3 tablespoons butter
2 cups cooked corned beef, finely chopped
3 cups cooked, chopped potatoes
2 tablespoons minced onion
2 tablespoons chopped parsley, optional
salt, pepper and brown gravy

But i usually get my out from the can then cook it up.

My favourite dish is pasta jambalaya. I'm not a big fan of regular jambalaya with rice, though, whenever I've had it the rice has always been crunchy and gross.
