There's been a good supply of fresh eggs from my sister's chickens down the road...so I've been making lots of eggs: scrambled, as omeletts, over medium, over well, hard boiled...prefer them more firm to runny : p

But they're pretty easy to make after a few goes; I use a moderatley heavy pan, enamel over copper/steel. It's fun to flip them over just using the pan, and no spatula...and only occasionally messy!
