I did spook a skunk IRL. We were both walking around late at night, and it just hobbled out of the bushes. We both saw each other and jumped. Then we slowly backed away from each other an no one got sprayed.

I think they mostly don't spray immediately, as they would loose their defence for a few days. Read that somewhere ^^

I myself have like no risk of ever getting sprayed by a skunk. We don't have any here in Europe
