Oh, I like bison! There is a large Bison herd here, oddly; about 300 or 350 in size. Used to border where I went to middle school: Oleson's Buffalo Farm; largest herd East of The Mississippi, the sign said back then.
Very tasty, and lean.

I remember I went to an aboriginal expo in Toronto back in elementary school. I have no idea what that specific recipe was called, but they had breaded bison steaks that were a bit spicy and they were so good. Easily the highlight of my first 15 years on this ball of rock.
