They be dishonourable, a knight should only engage his (or her) foe with swords and the like, projectile weapons are for those with no sense of honour!
(Which is why a large number of knights take a large army of peasants with them all armed with bows, the non honourable peasants can shoot the buggery out of the enemy because they don't know any better.)

(That was actually in the rules of an old Warhammer faction, a few 'Honourable' knights on horseback, backed up by a ton of peasants with arrows to soften up the enemy before the knights went in for the kill.)
