That's something that intrigued me at first when I learned about it as well. You would probably call it an empanada or empanadilla!
I should really look into the etymology of pastel...

pastel (n.)

1660s, "crayons, chalk-like pigment used in crayons," from French pastel "crayon," from Italian pastello "a pastel," literally "material reduced to a paste," probably from Late Latin pastellus, diminutive of pasta "dough, paste" (see pasta). The word was applied to pale or light colors (like that of pastels) by 1899. As an adjective from 1884.

Alright.. In part, that explains why cakes are "pastel" in Spanish, and why our Portuguese pastel has this name. All boils down to the dough.
As for why cakes are called "bolo" here... Most sources I've found say it's probably derived from "bulla", which denotes "round" things; it's possible that the usual round shape of cakes gave them this name in Portuguese
