Shii-Cho is the form I teached to the padawans in training
It's the simplest combat form
But even some jedi masters did use this form primarily (I can't recall their names sorry)

And Soresu is the form III (santo I'm right, right?) The most defensive form used by jedi masters as Obi wan kenobi
This form is used to protect against blasters and other saber attacks
This form is weak aganst the makashii form used for example by the count dooku iirc
