I honestly didn’t read through all the answers so I’m unsure whether or not this is a repeat but...

Tasmanian devils!! I love those little critters. I’d love to see more of them. Originally, my sona was going to be one before I decided on a wolf. Would be pretty awesome to see more of them.

Okay yes actually, I’d love to see more deer!! They’re one of the most adorable species imo yet I see very few of them.

I want to see original furries that aren't based on one animal.

Rhubarb, for instance, is a mix of dragon / rabbit / moth traits passed off as "a fairy dragon":

I agree about more deer though. I have at least thirteen of them myself (10 being reindeer) and will be drawing a bunch of them this month and December

It's really nice to see that people want more raccoons around! *waves paw*
I have two fursona's -- one is raccoon, and one is a naga. (Think Gorgon's from Magic the Gathering, mixed with Yuan-ti pureblood from D&D.)
It would be nice to see more like myself, or more cows.. I love cowgirls! ^^

I know that some people who've posted here have said these already, but I'd love to see more birds and fish! Cockatiels, budgies, quails, peacocks/peahens... But honestly, I'm still kinda disappointed that there's pretty much no cuttlefish sonas/OCs out there. They're so cool!

Cockatrices, thylacines, moths (and other insects), and mustelids are kinda high up on the list as well as basically any mythical creature that isn't a dragon. harpies in particular because I think they'd make a cute combo with some species

I've never seen a gerbil fursona, nor have I met a gerbil therian. It's a complete coincidence that therians are usually bears, dragons, and wolves.

I figure it's for the same reason that reincarnations always appear to be as Arthurian nights, royalty or great historical figures! Though I have run into a couple of otters and a badger therian.
