Either Catherine or Shamir from Fire Emblem: Three Houses. Both of them are mature and have a sense of refinement, but Catherine also seems more playful and outgoing, while I feel like Shamir is the kind of woman you can go on long car or train rides with and have deep meaningful conversations with over tea or something while getting the occasional flirt outta her.
